Inspired by Claire Saffitz's all purpose brioche dough, this recipe cuts the butter calories by nearly a quarter!

  • 1oz (23.5g) whole milk (105º F/40.56ºC)
  • 1/2 tsp (1.5g) active dry yeast
  • 2 cups (260g) all purpose flour
  • 1/8 cup (25g) sugar
  • 1 tsp (3g) salt
  • 3 Large eggs (at room temp)
  • 113g whipped avocado (food processor)
  • 1 beaten egg or heavy cream for brushing top
  • 8"x4.5" baking pan
